Carrboro, NC – Gray Squirrel Coffee Company has officially expanded its footprint in Carrboro, North Carolina, with the unveiling of its significantly enlarged roastery cafe. The popular local establishment recently completed renovations on an adjacent retail space, seamlessly integrating it with their existing operations to create a more robust and welcoming environment for coffee enthusiasts and the wider community. This expansion marks a significant milestone for the company, which has steadily grown since its inception in 2015.

From Humble Beginnings to a Thriving Hub

Gray Squirrel Coffee Company’s journey began in a modest 250-square-foot roastery cafe nestled within YesterYears Brewery. Founded in 2015, the company quickly established a reputation for quality coffee and a commitment to community. The initial venture provided a crucial foundation, allowing the founders to refine their roasting techniques and build a loyal customer base. Recognizing the potential for growth and the increasing demand for their offerings, Gray Squirrel made a pivotal move in 2017 to a more substantial 2,400-square-foot space located on East Main Street. This larger location became the heart of their operations, housing both their cafe and a dedicated roasting area.

The recent expansion project saw the acquisition and renovation of a 1,600-square-foot adjoining retail space. This newly incorporated area is now directly accessible from the original cafe via elegant glass doors, effectively doubling the customer-facing space and providing approximately 30 additional seats. The strategic integration of these two spaces offers patrons a clear and captivating view into a larger, more advanced roasting area, fostering a greater appreciation for the craft behind every cup.

A Tale of Two Spaces: Design and Atmosphere

The transition from the original Gray Squirrel cafe to the new expansion is marked by a distinct yet harmonious shift in design philosophy. The original space, characterized by its industrial-chic aesthetic featuring gray-washed brick walls, exudes a minimalist and raw charm. In contrast, the newly opened "Acorn Room," as it’s being casually referred to by the Gray Squirrel team, embraces a warmer and more inviting ambiance.

Sarah Persing, Gray Squirrel Coffee’s Director of Marketing, elaborated on this design duality: "Where the original cafe is industrial and minimalist, the new space, which we’re casually calling the Acorn Room, brings in warmth and midcentury modern touches," she stated. This new area features a richer palette of red brick, complemented by dark-stained walnut tables and counters. The inclusion of plush upholstered seating and rounded-edge coffee tables softens the overall feel, creating a comfortable and relaxed atmosphere. A subtle nod to retro-futurism is evident in the Googie-inspired decor and signage, adding a unique character that sets Gray Squirrel apart.

Industrial black and gray accents are thoughtfully woven throughout both spaces, maintaining a cohesive brand identity. However, the vibrant green that is synonymous with the Gray Squirrel brand is prominently featured in the new tiered pendant lighting, adding a playful and energetic pop of color that illuminates the space and highlights its modern design elements.

Enhancing the Coffee Experience: The Slow Bar and Roasting Capabilities

A significant addition to the expanded cafe is the introduction of a dedicated slow bar. This specialized area is designed to showcase and celebrate manual brewing methods, offering customers a more intimate and interactive coffee experience. The slow bar will serve as a venue for regular cuppings and engaging conversations about coffee, allowing patrons to delve deeper into the nuances of flavor profiles and brewing techniques.

The slow bar is equipped to highlight Gray Squirrel’s premium "Reserve" coffees, prepared using a variety of esteemed manual brewers, including Chemex, Hario Switch, Etkin, and AeroPress. These brewers are also available for purchase, empowering customers to recreate their favorite brewing methods at home. Complementing this artisanal approach, a single-origin espresso program is centered around a high-performance, single-group La Marzocco Linea, ensuring precision and excellence in every espresso shot.

On the roasting front, the expansion represents a significant upgrade in capacity and efficiency. Co-Owner and Head Roaster Shaw Sturton is transitioning from an early-1990s Probat L12 to a trio of refurbished Probat machines: an L12, an L5, and a Probatino. This investment in advanced roasting technology signifies Gray Squirrel’s commitment to elevating their coffee quality and consistency. The expanded production setup also includes a new destoner and state-of-the-art packaging equipment, streamlining the process from bean to bag. This enhanced roasting capability will not only supply the cafe but also bolster their wholesale operations and facilitate the introduction of redesigned packaging for both retail and online sales.

A Strategic Vision for Growth and Community Engagement

The expansion is not merely about increasing seating capacity; it is intrinsically linked to Gray Squirrel’s strategic vision for future growth and enhanced community engagement. The company has extended its operating hours, aiming to become a preferred lounge destination for locals seeking a relaxing spot before or after attending events at nearby venues, such as the Carrboro Music Festival.

"We’ve also extended our hours in the hopes of becoming a go-to lounge for folks to enjoy before dinner or a show at other local spots," Persing noted. This strategic move positions Gray Squirrel as a vital social hub within Carrboro, contributing to the vibrancy of the local arts and entertainment scene.

Furthermore, the expansion is a critical step in strengthening their wholesale business and investing in training and education. "A key reason for the expansion is to enhance our wholesale business and improve training and education for both our staff and customers, so we are looking forward to putting our energy into those avenues," Persing explained. This focus on education underscores Gray Squirrel’s dedication to fostering a deeper understanding and appreciation of specialty coffee within their community and among their business partners.

The Bakery: A Flourishing Component with Future Plans

Gray Squirrel’s commitment to a holistic cafe experience is further evidenced by its thriving in-house bakery. The company added an onsite kitchen to its current cafe in 2018, enabling them to produce their own baked goods and flavored syrups. This initiative has proven highly successful, but the bakery is now reaching its capacity.

"The bakery is quickly outgrowing its current spot, so we are planning a kitchen expansion down the line, which will also allow us to add more substantial lunch options and artisan breads to the menu," Persing revealed. This forward-thinking approach highlights Gray Squirrel’s ambition to offer a comprehensive culinary experience, further solidifying their unique position as a cafe-bakery-roastery in the region. "We are unique as a cafe-bakery-roastery in this area, and we want to make sure that our customers are aware of the full range of delicious things that we craft here," she added.

A Commitment to Employees and a No-Tipping Policy

In line with its commitment to fostering a positive and supportive work environment, Gray Squirrel Coffee Company maintains a no-tipping policy. The company has integrated employee benefits and annual cost-of-living increases directly into its compensation structure. This approach aims to provide employees with stable and equitable compensation, fostering loyalty and dedication within the team. This policy reflects a broader trend in the service industry towards more sustainable and employee-centric business models.

Looking Ahead: Grand Openings and Future Renovations

Following an initial period of operation for the newly expanded space, Gray Squirrel Coffee Company is planning a grand opening celebration later this year. This event will serve as an opportunity to officially welcome the community to their enhanced facility and express gratitude for their continued support.

Beyond the immediate expansion, the company is also considering future renovations to the original cafe area and its outdoor seating spaces. These potential enhancements aim to further improve the customer experience and expand the venue’s capacity for community events. "We would love to be able to host live acts out front during the Carrboro Music Festival and other events," said Persing. "We are excited to be able to offer more space for our awesome community to gather."
