North Kansas City, Missouri, a city known for its burgeoning industrial and creative sectors, is now home to the highly anticipated first brick-and-mortar establishment of Provis Coffee Roasters. Occupying an impressive 6,000 square feet spread across two meticulously designed levels, this new venture marks a significant milestone for the specialty coffee roaster, expanding its footprint beyond its wholesale operations and into a public-facing destination for coffee enthusiasts and the local community alike. The grand opening, held on September 26th, has ushered in a new era for Provis, offering a multifaceted experience that blends artisanal coffee, thoughtful design, and a commitment to producer relationships.
A Vision of Ample Space and Literary Charm
The expansive new Provis Coffee cafe is strategically divided to cater to diverse needs and experiences. The ground floor serves as the vibrant heart of the operation, featuring the main coffee bar and ample seating designed to foster connection and conversation. Ascending to the second level reveals a more refined and specialized environment, housing additional seating areas, a dedicated cupping lab for professional sensory evaluation, and a dedicated slow bar for meticulously prepared pour-over coffees.
The centerpiece of the ground floor is a striking 25-foot main bar, a harmonious blend of cool, white quartz countertops and warm, hand-milled oak accents. This aesthetic choice, which extends to other design elements throughout the space, contributes to an overall ambiance that co-founder Randall Buchanan describes as a "1930s literary vibe." The lower level is further enhanced by the inviting glow of sconce lighting and the comforting warmth of a wood-burning fireplace, creating a cozy retreat. Lining the dark blue walls are hundreds of books, curated to evoke a sense of intellectual curiosity and relaxation, transforming the space into a haven for both coffee lovers and bibliophiles.

"Beauty is one of the core elements of our company, and I think we really nailed the beauty aspect in this space," Buchanan shared with Daily Coffee News. This commitment to aesthetics is a foundational pillar of Provis Coffee Roasters, aiming to create an environment that is as inspiring as the coffee it serves.
Interior Design: A Symphony of Color and Craftsmanship
The interior design, expertly helmed by Provis Co-Owner Kristen Kurtz, is a testament to thoughtful curation and brand integration. The upper level is enveloped in deep green lounge walls, a color that subtly echoes the powder coating of the state-of-the-art Slayer Steam LP espresso machine that anchors the main bar. Complementing this sophisticated palette are clear glass globe pendants that cast a gentle light, illuminating the precision of the Poursteady brewer and grinders.
Further enhancing the visual narrative, deep red walls in the upstairs conference room draw inspiration directly from the Provis packaging, creating a cohesive and memorable brand experience. This deliberate use of color and material not only appeals to the senses but also reinforces Provis’s identity and commitment to quality.
The Art and Science of Roasting: A Dual Pursuit
Randall Buchanan, the driving force behind Provis’s roasting operations, currently utilizes Probat equipment housed at the nearby StoneX Specialty Coffee facility in Riverside, Missouri. This strategic partnership allows Provis to maintain a high standard of quality and consistency in their roasting process. Buchanan’s passion for roasting is deeply rooted in its multifaceted nature, encompassing both scientific precision and artistic intuition.

"The roasting part, for me, has been kind of a twofold excitement," Buchanan explained. "The chemistry aspect of roasting is just epic – honing in using both the sensory element and the data points from the equipment or the software. The other side of that fold is the relationships you can build with the producers."
This dual focus underscores Provis’s commitment to not only producing exceptional coffee but also to fostering ethical and sustainable relationships within the global coffee supply chain.
Sourcing Excellence: Building Relationships from Farm to Cup
Provis Coffee Roasters distinguishes itself through its dedication to sourcing high-quality green coffee beans, cultivating relationships with a diverse range of suppliers. In addition to working with StoneX for roasting, Buchanan relies on esteemed importers such as Balzac Brothers and Ally Coffee.
The company’s commitment to direct trade and partnerships with specific producers is evident in its offerings. Colombian coffees are sourced from Ventola Coffee, a company owned by producer Felipe Trujillo, and directly from Edwin Noreña’s Finca Campo Hermoso, renowned for its innovative processing methods. Ethiopian coffees are provided by Moii Coffee, further diversifying Provis’s portfolio. This carefully curated selection allows Provis to offer a spectrum of coffee profiles, ranging from familiar and comforting to the uniquely experimental.

"We want to have coffees that score high on the SCA cupping scale, but we also have things that are pretty unique and experimental. And there’s also just consistency, the daily cup of coffee," Buchanan stated. "For the wholesale program, not everybody’s gonna want to have anaerobic naturals or co-fermented coffee offerings. My general philosophy is just having an approachable program."
This philosophy ensures that while Provis embraces innovation and high-scoring coffees, they remain accessible to a broad audience, catering to both the discerning palate of the specialty coffee connoisseur and the everyday coffee drinker.
A Rich Legacy and a Forward-Looking Team
Randall Buchanan brings a wealth of experience to Provis Coffee Roasters, having honed his craft over 16 years in the coffee industry. His career trajectory includes significant roles at prominent St. Louis-based coffee companies such as Kaldi’s Coffee and Sump Coffee, as well as wholesale positions with Coma Coffee Roasters and, most recently, Teleo Coffee. His move to Kansas City signifies a new chapter in his distinguished coffee journey.
The ownership team of Provis is a dynamic blend of expertise and passion. Alongside Buchanan, Ronni and Kristen Kurtz, Jesse and Laura Worcester, and Josh and Meagan Brown form the core ownership group, supported by other minority investors. Josh Brown contributes a strong background in finance, ensuring the business’s fiscal health, while co-owner Ronni Kurtz, an author and assistant professor of theology at Midwestern Baptist Theological Seminary, brings a unique intellectual and creative perspective to the venture.

Future Horizons: Culinary Expansion and Community Engagement
With the successful launch of their flagship cafe, Provis Coffee Roasters is poised for further growth and diversification. The immediate future includes the development of made-to-order sandwiches and light bites, curated by culinary director Caleb Wattenschlager. This expansion into food offerings aims to enhance the cafe experience, providing patrons with a more complete dining option.
Looking further ahead, a dedicated Provis roastery is a long-term aspiration, which would allow for greater control over the entire production process. However, the current cafe space is already designed to serve as a hub for community engagement, offering ample room for cuppings, educational workshops, and other customer-focused events.
"We’ve [been] making a ton of headway with our wholesale program, so I think developing more wholesale relationships is a pretty big move for us," Buchanan commented. "We’ve been able to gain some accounts, create custom blends and really focus on providing resources and education for other coffee programs, too."
This strategic focus on wholesale growth, coupled with the new cafe’s capacity for education and community building, positions Provis Coffee Roasters as a significant player in the regional coffee landscape. The company’s commitment to both exceptional coffee and enriching the local community underscores its ambitious vision for the future.

Provis Coffee Roasters is located at 2914 N. Buchanan St. in North Kansas City, Missouri, inviting the community to experience its unique blend of artisanal coffee, thoughtful design, and warm hospitality.
