Cleveland’s burgeoning coffee scene has a new landmark with the opening of Vessel Coffee Collaborative in the vibrant Gordon Square neighborhood. This ambitious new café, launched this month, is poised to redefine the local coffee experience by not only offering meticulously sourced beans from across the nation but also by fostering a collaborative environment that emphasizes community engagement and exploration. Spearheaded by Cleveland coffee veterans Austin Fedor and Jacob Digman, Vessel Coffee Collaborative aims to be more than just a place to grab a cup of coffee; it aspires to be a hub for discovery, a platform for local creators, and a testament to the evolving palate of coffee enthusiasts.
A Collaborative Vision Takes Root
The genesis of Vessel Coffee Collaborative is rooted in the shared passion and extensive experience of Austin Fedor and Jacob Digman, both well-respected figures within Cleveland’s coffee community. Their journey began working side-by-side at Rising Star Coffee, a prominent local roaster, where they honed their skills and developed a deep understanding of coffee culture. Fedor later expanded his entrepreneurial horizons by co-founding Index Coffee & Books in Cleveland’s Ohio City neighborhood, further cementing his commitment to innovative café concepts.

It was at a pivotal moment, when both Fedor and Digman found themselves seeking new professional avenues, that the seeds of Vessel were planted. Digman approached Fedor with the concept for a café that would champion a curated selection of national roasters, a departure from the typical model of focusing on a single local roaster. This idea resonated deeply with Fedor, and the collaborative build-out of the 2,000-square-foot space commenced in September 2025, culminating in its highly anticipated opening this month.
The ownership group also includes Cory Hajde, Digman’s husband, who plays an integral role in overseeing the café’s operations and, crucially, its coffee selection. This collaborative spirit extends beyond the core team, with the owners expressing a strong desire to involve the public in shaping the café’s future offerings. "We like to choose coffees based on feedback," Jacob Digman told Daily Coffee News. "We love listening to what our customers are excited about, and we will bring in other roasters so that we can all try them together. We all have slightly different palates." This customer-centric approach promises a dynamic and evolving coffee menu, ensuring that Vessel remains at the forefront of emerging trends and consumer preferences.
A National Tapestry of Roasts
Vessel Coffee Collaborative distinguishes itself by presenting a carefully curated lineup of roasts from acclaimed coffee producers across the United States. For its initial opening, the café is proudly featuring selections from Little Waves Coffee Roasters of Durham, North Carolina, a recipient of Roast Magazine’s prestigious 2022 Micro Roaster of the Year award. This recognition underscores Little Waves’ commitment to quality and innovation in small-batch roasting. Complementing this offering is coffee from Flower Child Coffee, based in Oakland, California, another roaster known for its dedication to exceptional beans and ethical sourcing.

The decision to showcase roasters from outside Ohio is a deliberate strategy to broaden the coffee horizons of Cleveland consumers. "We are very lucky in Cleveland to have a wide selection of really dialed-in roasters," Digman noted. "I’d say even more than typical for a city this size. At Vessel, we are more looking to fill the niche of ‘exploration’ of coffee and what is out there nationally, and eventually we hope even internationally." This mission to introduce Clevelanders to the diverse landscape of American specialty coffee positions Vessel as a vital educational and experiential space for coffee lovers.
The café’s commitment to exploration isn’t limited to its initial offerings. Digman has articulated plans for future collaborations and tastings, emphasizing the ongoing dialogue with customers. "We’ve talked a lot about doing after-hours tastings of new coffees coming in and being involved in neighborhood events," he said. This proactive approach to community engagement and coffee education suggests a long-term vision that goes beyond mere retail.
An Ambiance of Warmth and Discovery
The physical space of Vessel Coffee Collaborative, located at 5019 Detroit Avenue, is as thoughtfully designed as its coffee program. The 2,000-square-foot interior is bathed in natural light from its prominent storefront windows, creating an inviting and airy atmosphere. As one moves deeper into the café, the lighting subtly dims, leading to more intimate seating arrangements. Circular two-top tables, illuminated by elegant pendant lights and adorned with lush hanging plants, offer cozy nooks for conversation or focused work.

The design aesthetic skillfully blends vintage charm with contemporary comfort. Dark, well-worn wood floors and painted copper ceiling tiles evoke a sense of history and warmth, while natural wood surfaces throughout the space reinforce this organic feel. Contoured chairs subtly nod to the architectural era of the building, adding a touch of timeless elegance. A dedicated lounge area in the rear of the café features a striking gallery wall and a community bookcase, inviting patrons to linger and connect. This area is anchored by a warm green accent wall that stretches the length of the café, adding a touch of natural vibrancy to the sophisticated interior.
The operational heart of the café is its well-appointed bar, equipped with high-end equipment designed to facilitate both efficiency and precision. Baristas will be utilizing Mahlkönig grinders, renowned for their consistency and performance, alongside a Fetco batch brewer for large-format coffee service. For pour-over enthusiasts, Hario V60 setups are available, allowing for a hands-on appreciation of brewing techniques. The centerpiece of the espresso program is a Synesso S200 espresso machine, a professional-grade instrument capable of producing exceptional espresso-based beverages. This commitment to quality equipment ensures that every cup served meets the highest standards.
A Local Ecosystem of Support
Beyond its focus on coffee, Vessel Coffee Collaborative is deeply committed to supporting the broader Cleveland creative and culinary ecosystem. The café sources its food offerings from a curated selection of local providers, demonstrating a dedication to bolstering neighborhood businesses. Among these collaborators are Cleveland Bagel Co., known for its artisanal bagels; Raisin Hell Vegan, offering plant-based treats; Leavened, a local bakery; and Dramatic Snax, which contributes both sweet pastries and unique drink syrups. This integration of local food purveyors not only enhances the café’s menu but also strengthens its ties to the community.

Furthermore, Vessel has commissioned artist Emily Frances to design its branded merchandise. This collaboration highlights the café’s role as a platform for local artists to showcase their talents, further embedding Vessel within the fabric of Cleveland’s creative scene. "We want to continue to be a place for these local creators to showcase their work," Digman stated, underscoring the café’s commitment to fostering a supportive environment for artisans and makers.
Building a Unique Community Hub
The opening of Vessel Coffee Collaborative marks a significant moment for Cleveland’s specialty coffee landscape. By bringing together experienced local talent, national coffee roasters, and a commitment to community engagement, the café is poised to become a destination for both seasoned coffee aficionados and newcomers alike. The emphasis on exploration, collaboration, and local partnerships sets a compelling precedent for future café ventures.
"We want to build a team of baristas who care about what we are doing here and want to be creatively involved," Digman shared. "We are really focused on getting this space perfectly dialed-in to have somewhere very unique that feels special to visit." This dedication to cultivating a passionate team and creating a distinctive atmosphere suggests that Vessel Coffee Collaborative is not just opening a business, but rather cultivating a community cornerstone. As the café settles into its new home in Gordon Square, its unique approach to coffee and community promises to enrich the local culture and inspire a new wave of coffee appreciation in Cleveland. The café’s strategic location in Gordon Square, a neighborhood known for its arts, entertainment, and growing residential base, further positions it for success and widespread community embrace.
